However, it increases the availability of lycopene and beta-carotene from tomatoes. Using canned food can bre more affordable than using fresh and also more convenient, because you won't need to chop them before adding them to recipes. Canning also makes it possible to use vegetables that are out of season or not available in other forms in your supermarket, making it easier to eat a wide variety of different veggies.
